Raw cocoa powder from the variety Criollo ( Theobroma cacao L. ) is considered the "queen of cocoa" due to its rarity and superior nutritional profile. As it is produced from unroasted beans at temperatures below 42-45°C, it preserves all the enzymes, vitamins and antioxidants that are usually destroyed in common cocoa powder.
Ways of Use
Due to its milder and less bitter taste compared to other varieties, Criollo is ideal for:
