The Agrimony ( Agrimonia eupatoria ) is a traditional herb offered in the form of dried leaves and stems for the preparation of a beverage. It is distinguished by its soft, earthy aroma that is slightly reminiscent of apricot and its tart, refreshing taste .
In the kitchen, it is often used as a base for aromatic teas, while its mild bitterness makes it ideal for mixing with sweeter herbs such as mountain tea or linden.
To prepare it, a brief 5-10 minute infusion in hot water is sufficient to bring out its botanical notes without becoming bitter.
If you want to tone down its bitter taste and make a balanced drink, try this ratio:
2 parts Agrimony (for the earthen base)
1 part Mint (for freshness)
1 part lime (for sweetness)
Preparation: Mix the herbs and use 1 tablespoon of the mixture in a cup of hot water (85°C-90°C) for 7-8 minutes.
Ideal Storage
Container: Use airtight glass jars or metal cans. Avoid plastic bags, as the herb can "sink"
Environment: Store in a dark, cool place (cupboard), away from sunlight and kitchen humidity. Light degrades the herb's oils and makes it fade
Shelf life: If stored properly, it maintains its freshness for 12 to 18 months
