The Aleppo Chilli Flakes (also known as Pul Biber) is one of the most refined spices of the Middle East, distinguished by its balance between flavor and intensity. It comes from the Halaby pepper and takes its name from the city of Aleppo in Syria. 

Unlike common bell peppers or chilies, Aleppo pepper offers a mild pungency that does not overshadow the other ingredients. It has:

Fruity notes: Flavor reminiscent of sun-dried tomatoes and raisins.

Earthy aroma: A subtle smoky sensation with hints of cumin.

Balanced texture: Its leaves are usually slightly oily (as they are traditionally dried with a little oil and salt), which preserves their color and freshness.
