The Madagascar vanilla pods (Bourbon Vanilla Beans) are considered the "gold standard" in the world of gastronomy. They come from the Vanilla planifolia orchid and the term "Bourbon" refers to the traditional ripening method perfected on the islands of the Indian Ocean. 

Features and Quality

Aroma & Taste: They are distinguished by their rich, creamy and sweet aroma with strong notes of butter and cocoa. 

Appearance: Quality pods are dark (almost black), flexible, and oily to the touch. 

Content: Inside they hide thousands of tiny black seeds (the "vanilla caviar"), which provide the authentic flavor and distinctive appearance to the sweets.

Ways of Use

Baking: Perfect for crème brûlée, vanilla ice cream, custards, and cakes. Split the pod lengthwise and scrape the seeds directly into the mixture. 

Homemade Extract: Place 3–4 pods in a jar with vodka or rum for 2–3 months to create your own pure vanilla extract. 

Aromatic Sugar: After using the seeds, don't throw away the empty pod. Place it in a jar with sugar to give it a wonderful aroma.
