The Juniper Berries , from the plant Juniperus communis , are one of the most distinctive spices in world cuisine. Although they are called "berries," they are actually the fleshy cones of an evergreen coniferous tree.
Flavor Profile & Aroma
Taste: It is distinguished by a rich piney and resinous base with notes of citrus and pepper. It is bitter and slightly sweet at the same time.
Aroma: Fresh and clean, strongly reminiscent of gin , as they are the main aromatic component of this drink.
Texture: The dried fruits have a dark blue-black color and often a fine silvery "dust" (bloom) on their surface.
Culinary Uses & Combinations
Due to their intensity, fruits are used sparingly (usually 2-4 fruits per dish):
Meats: It is the classic spice for hunting (deer, wild boar, hare), as its resinous flavor balances the strong smell of these meats. It also goes well with pork and lamb.
Vegetables: They are an essential ingredient for traditional German sauerkraut (pickled cabbage), while they also beautifully flavor roasted potatoes or carrots.
Marinades: They are often crushed slightly before use to release their essential oils in marinades, sauces, and brines.
Combinations: They go perfectly with garlic, rosemary, thyme, black pepper and red wine.
If you add the whole fruit to a dish, it is a good idea to remove it before serving , as eating it whole can be very strong and bitter.
They should be stored in an airtight container, in a dark and cool place, to maintain their aroma for up to 1.5 years.
