Dried green sweet pepper flakes( Capsicum annuum ) are a practical and highly nutritious alternative to fresh peppers. They retain the cool, earthy and slightly spicy flavor of the vegetable, while offering a long shelf life and ease of use throughout the year. 

Characteristics and Flavor Profile

Taste: They have a mild, vegetal (herbal) flavor, which is less sweet than that of red pepper and leaves a pleasant spicy note in the aftertaste.

Texture: They are dehydrated and relatively hard, but soften immediately when they come into contact with liquids or during cooking.

Intensity: They are considered completely sweet with 0 Scoville units (SHU) , as they come from varieties without capsaicin. 

The drying process concentrates the nutrients, making the flakes a vitamin "bomb". The dried form provides up to 3 times more vitamin C per gram than fresh, strengthening the immune system.

To maintain their aroma, they should be stored in an airtight glass jar , in a cool, shady place. Properly stored, they maintain their quality for at least 6-12 months .
