The Greek Green/Brown Olives of Chalkidiki in Brine come from the Chondrolia Chalkidikis variety, which is cultivated exclusively in the fertile land of Northern Greece. They are known worldwide for their large size and "royal" appearance.
Features and Quality
They have rich, crunchy flesh and a small pit.
They are harvested in early autumn (September-October) when they are still green. The "brown" varieties result from slightly more advanced ripening or special treatment in brine, maintaining a fuller flavor.
They have a cool, slightly spicy and fruity flavor, with a subtle acidity that makes them extremely appetizing.
Ways of Use
Stuffed Olives: Due to their size, they are the ideal olives for stuffing with almonds, bell peppers, garlic or lemon.
Cocktails: They are the classic choice for an authentic Martini , thanks to their clean taste and firm texture.
Accompanying (Meze): They go perfectly with white wines, tsipouro and yellow cheeses.
