The Natural Chios Mastic Tears (in small and medium size) are the authentic resin of the Pistacia lentiscus , which thrives exclusively in southern Chios. The choice between small (fine) and medium tears depends mainly on the way you intend to use them.

Small Tears (Small Tears / "Psili"): They are ideal for grinding . Because they are small, they harden more evenly and are easily crushed in a mortar or blender without sticking (especially if frozen beforehand). They are widely used in cooking, confectionery (tsoureki, ice cream) and bakery.

Flavor Profile & Experience

Taste: Initially slightly bitter, but quickly transforms into a unique, cool and slightly sweet aroma reminiscent of pine and cedar.

Texture: As it is chewed, the resin transforms from a hard crystal to a rubbery, white mass.

Tips for Use

Natural Gum: If you want to chew it, start with a small piece and gradually add more. If it is too soft and sticks to the teeth, add a harder tear.

Cooking: To make it into powder, always grind it together with a little sugar or salt (depending on the recipe) so that it does not become a mass due to the heat from the friction.

Storage: Keep in a cool and shady place . If the room temperature exceeds 18-20°C, place it in the refrigerator to prevent the tears from sticking together.
