Dried Whole Elderberries ~ Sambucus Nigra

The Dried Whole Elderberries , from the plant Sambucus nigra,  is one of the most "multidimensional" fruits of the forest. While most people know them for their immune system, these fruits hide an entire culinary and creative experience.

The Taste Experience & Texture

Taste: The dried fruits have a deep, sweet-sour and slightly astringent flavor, reminiscent of something between a raspberry and a black currant with earthy undertones.

Color: Their intense dark purple/black color is due to anthocyanins, which dye everything.

Creative Uses

Homemade Syrup: This is the most popular use. By boiling the berries with honey, cinnamon, and cloves, you make a delicious syrup for pancakes , yogurt, or even cocktails (it goes incredibly well with gin).

Gourmet Cooking: Add some dried fruits to sauces for game or red meat . Their acidity perfectly balances the fat content of the meat.

Baking: You can add them to muffins or bread, after soaking them slightly in warm water to "come to life".

Natural Dye: Due to their intense color, they are traditionally used for dyeing fabrics (wool, silk) in shades of lilac and violet.

They are full of vitamin C and fiber, providing energy with very few calories.

They are considered one of the top sources of antioxidants in nature, helping to rejuvenate the skin and combat stress.

Elderberries should not be consumed raw in large quantities, as they may cause stomach upset. Drying reduces this risk, but the best flavor and safety is always achieved by boiling (in tea or syrup).
