The Cubeba pepper ( Piper cubeba ), also known as "tailed pepper" due to the short stem that remains attached to the fruit, is a rare spice originating mainly from Indonesia. Although it looks similar to black pepper, it offers a completely different and complex aromatic profile.
Flavor Profile
Whole seeds are dried fruits that are harvested before they ripen.
Aroma: It has an intense, pleasant aroma with notes of eucalyptus, pine and lemon .
Taste: Its flavor is described as a combination of black pepper and allspice. It is warm, slightly bitter and spicy, but less hot than common pepper (score 3/10 in intensity).
Culinary Uses
Due to its particular acidity and woody tones, Kupemba is used in a wide range of recipes:
Meat & Fish: Ideal for marinades, grilled meats (duck, lamb) and fish, where citrus notes highlight the dish.
Spice Mixtures: It is a key ingredient in the African mixture Ras el Hanout .
Beverages: It is used to flavor premium alcoholic beverages, such as gin (e.g. Bombay Sapphire), but also in mulled wine.
Sweets: Goes well with recipes with dark chocolate, gingerbread cookies and fruit salads.
It is a source of iron and sodium , and also contains zinc.
