Ceylon cinnamon powder (Ceylon Cinnamon Ground Powder), scientifically known as Cinnamomum zeylanicum or Cinnamomum verum , is often referred to as “true cinnamon.” It comes from the inner bark of the tree that grows mainly in Sri Lanka (formerly Ceylon) and is considered to be of superior quality to the common Cassia cinnamon.

Ceylon cinnamon stands out for its special characteristics:

Taste & Aroma: It has a delicate, sweet and slightly citrusy flavor with an aroma reminiscent of vanilla and cloves. It is less intense and spicy than Cassia.

Appearance: Its powder is light brown or yellowish in color , in contrast to the dark reddish-brown of common cinnamon.

Coumarin Content: Its most important advantage is its minimal coumarin content (about 0.004% compared to 5% in Cassia), making it safe for regular consumption.

In cooking it is one of the most common seasonings, suitable for spicy foods and sweet dishes. It gives aroma to grilled meats, stewed foods, as well as to many sweets from the spoon or the oven.

To maintain the potency and aroma of the powder, it should be stored in an airtight glass container (preferably dark), in a cool, shady and dry place . The powder retains its freshness for about 6 to 12 months , while the whole sticks can last up to 2-3 years.
