The Calendula ( Calendula officinalis ), known in Greece as Calendula or Marigold , is one of the most recognizable and beautiful flowers of the Mediterranean. Its dried petals and whole flowers are used to create a drink with a soft character and bright color.

Taste: It has a mild, slightly woody and sweet flavor, with subtle notes reminiscent of pepper or saffron.

Aroma: Its aroma is delicate and herbal , offering a sense of freshness.

Color: The drink acquires an impressive golden yellow or orange color, depending on the density of the petals.

Preparation Instructions (Tea)

To preserve the delicate flavor of the flowers:

Dosage: Use 1-2 teaspoons of dried petals per cup.

Temperature: Add hot water (about 90°C ). Avoid boiling water to avoid bittering the petals.

Time: Let it steep for 5 to 10 minutes .

Serving: It is pleasantly drunk neat, but goes excellently with honey or a little orange.

Storage & Maintenance Tips

Calendula petals are very sensitive to light. If exposed to sunlight, they quickly lose their vibrant color. Store them in dark glass jars or in a cupboard.

Keep them in a dry place , as moisture can cause the texture of the flowers to deteriorate.
