Brown coconut sugar is a natural, unrefined sweetener made from the sap of the coconut palm tree's flower buds, known for its rich, caramel-like flavor and granular texture similar to regular brown sugar. It is a popular, plant-based alternative to refined sugars.

Coconut sugar (also known as coconut palm sugar or coco sap sugar) is produced by collecting the liquid sap and heating it until the water evaporates, leaving behind brown, crystalline granules. This minimal processing means it retains trace amounts of minerals like iron, zinc, calcium, and potassium, as well as some antioxidants and the fiber inulin, which is absent in highly refined white sugar. 

Its flavor is subtly sweet with warm notes of caramel and toffee, rather than a coconut taste, which makes it a versatile 1:1 substitute for brown or white sugar in most recipes.
