How to Use Them
Because the seeds are very hard, they are rarely consumed whole. The two most common ways are:
Achiote Oil (Annatto Oil): Gently heat 1 cup of oil with 2 tablespoons of seeds until the oil turns a deep red color. Strain and use to sauté rice, meat, or vegetables.
Achiote Paste: Soak the seeds in hot water and then grind them with garlic, vinegar, and other spices (like cumin) to make a marinade (perfect for the Mexican dish Cochinita Pibil).
Infusion: You can soak the seeds in hot water to make a dye for soups and broths.
