The red pepper Bird's Eye ( Capsicum annuum or Capsicum frutescens ), also known as Pimienta Roja or Prik Kee Nu (in Thailand), is a tiny but extremely potent variety of chili pepper. Despite its small size (usually 1-2 cm), it offers a strong and immediate heat, making it a staple ingredient in Southeast Asian and African cuisines.
Features
Heat Level: It is classified as a "very hot" pepper, with 50,000 to 100,000 Scoville units (SHU) . For comparison, it is about 10 to 20 times hotter than a common jalapeño.
Flavor Profile: Beyond the capsule, it has fruity, floral and slightly citrusy notes . When dried, its flavor becomes deeper and smoky.
Appearance: Thin, pointed peppers that grow upright on the plants. Their color changes from green to a bright, shiny red when fully ripe.
How to Use:
It can be used whole to flavor oils and soups, chopped into marinades, or ground into powder for an instant spiciness addition to any dish.
When handling whole Bird's Eye peppers, it is recommended to wear gloves , as capsaicin can cause severe irritation to the skin and eyes.
