The Nutmeg Flowers , known internationally as Mace (and in Greece often as Masis), are not actually flowers in the botanical sense, but the bright red, reticulate sheath (arillion) that surrounds the seed of the nutmeg tree (Myristica fragrans).
Flavor Profile & Cooking
Mace has a similar flavor to nutmeg, but is considered more refined, smooth, and subtle , with notes of citrus and pepper.
Use in Broths: It is ideal for light-colored sauces, soups and broths, as it adds flavor without altering the color or texture of the dish (unlike grated nutmeg).
Pairings: Goes excellently with seafood, meat (chicken, lamb), cheeses, soufflés, but also with sweets such as cakes, fruit salads and syrups.
Spice Blends: It is a key ingredient in international blends such as Indian Garam Masala and Moroccan Ras el Hanout.
It is a source of vitamins A, C and B complex (riboflavin, niacin).
