The dried mugwort flowers (Mugwort - Artemisia vulgaris ), also known in Greece as wormwood, is one of the oldest herbs. The flowers are usually collected at the beginning of flowering (June to July), when the concentration of essential oils is at its highest.
Ways of Use
Decoction (Tea): Add 1-2 teaspoons of dried flowers to hot water and let steep for 5-10 minutes. The tea has a strong, slightly bitter flavor.
Cooking: Used as a seasoning on fatty meats (e.g. goose or duck) to facilitate the digestion of fat. It has a distinctive, earthy and intensely bitter flavor with notes reminiscent of sage and rosemary.
If you use it in cooking, use it in moderation (like thyme), because its intensity can easily overpower the other ingredients.
