The Grated mahlep (or mahallabi, Prunus mahaleb ) is a highly aromatic spice derived from the kernel of the pits of a species of wild cherry. It has a unique flavor profile that combines notes of bitter almond, cherry, and marzipan

Culinary Uses

Makhlep is mainly used in confectionery and bakery throughout the Mediterranean and the Middle East:

Greek Cuisine: It is the main ingredient for traditional tsoureki and vasilopita , offering their characteristic "oriental" aroma.

Baked goods: It is added in small quantities to cakes, cookies, buns and sweet breads to enhance their flavor.

Middle Eastern Sweets: It is a basic ingredient for stuffed Maamoul cookies (with dates or nuts) and traditional fried Qatayef .

Savory Applications: Although less common, it is used in the production of certain types of cheese (such as tresse cheese) or even in certain stews (tagines).

Flavor Combinations

Machlepi works similarly to nutmeg and pairs excellently with: 

Spices: Cinnamon, cloves, nutmeg, ginger and anise.

Other ingredients: Mastic, sesame, honey, vanilla, orange and rose water.

Usage Tips

Quantity: Because it has a strong aroma and slightly bitter aftertaste, it is always used in small quantities .

Storage: Grated mahlep loses its aroma quickly. Store it in an airtight jar, in a shady and cool place (or even in the refrigerator) to keep it fresh.
