The Lapsang Souchong is one of the most distinctive black teas in the world, known for its distinctive smoky aroma . It comes from the Wuyi Mountains of Fujian Province in China and its traditional preparation involves drying the leaves over a pine wood fire, which gives it notes of smoke, resin and dried fruit.

Features & Qualities

Lightly Smoked: Unlike the very strong versions that resemble "smoked bacon", the higher quality and lighter varieties have a refined balance between the natural sweetness of black tea and the soft pine smoke.

Flavor Profile: Deep, earthy, with undertones of caramel, hot wood, and sometimes a hint of plum.

Culinary Uses

Lapsang Souchong is the favorite tea of chefs because of its ability to impart a smoky flavor without the use of chemicals (liquid tobacco): 

Marinades: Use the strong decoction to marinate meats (chicken, pork) or fish (salmon).

Soups & Broths: Add a sachet or a few leaves to broths to add depth and smoky intensity.

Rub (Dry Marinade): Rub the dried leaves along with salt and pepper onto meat before grilling. 

Preparation Instructions

Water temperature: 95°C - 100°C.

Extraction time: 3 to 5 minutes.

It is usually drunk neat to enjoy its aroma, but it also goes great with a little milk or honey.
