The Cretan carob flour is a nutritional treasure of the Greek land, known for its high biological value. It is produced by grinding whole carob pods, after removing the seeds, and stands out for its deep, earthy sweetness that is reminiscent of a combination of cocoa and caramel .
In the kitchen, it is used as a healthy substitute for chocolate in cakes, cookies and smoothies, while in Crete it is the base for traditional carob rusks. It is extremely rich in calcium (it contains three times the amount of milk), dietary fiber that aids in digestion and antioxidants.
Its most important advantage is that it is naturally gluten-free , contains no stimulants such as caffeine, and is very low in fat, making it an ideal food for children and people who are watching their diet.
