The whole carob seeds (Greek Carob Seeds) come from the tree Ceratonia siliqua and have been known in Greece since ancient times as “keratia”. Although most people consume the flesh of the carob tree, the seeds themselves are the most valuable part of the fruit for the food industry and gastronomy.
Characteristics & Taste
Texture: The seeds are extremely hard and cannot be easily chewed without processing (soaking or boiling).
Flavor Profile: In their raw form they have a neutral to slightly sweet flavor. When roasted, they develop an aroma reminiscent of nuts and cocoa .
How to prepare them at home
If you have whole seeds and want to use them:
Softening: Soak them in water for 2-5 days or boil them for 20 minutes to soften them enough to open.
Roasting: If you want to grind them for a beverage, lightly roast them in a pan until they release their aroma.
