The Common Birch ( Betula pendula ), is one of the most classic northern herbs used to make a drink from its dried leaves.

Preparation Instructions (Tea)
To bring out the subtle notes of birch:
Use 1-2 teaspoons of dried leaves per cup.
Add hot water (about 90°C , not boiling, to avoid destroying the aromas).
Let it steep for 5 to 10 minutes .
Serve plain or with a slice of lemon , which goes great with the "dewy" of the birch.
Storage Tips
Because birch leaves are sensitive to moisture, store them in an airtight glass jar .
Keep the container in a shady place , as light can cause the leaves to yellow and lose their freshness.
