The Pai Mu Tan (also known as Bai Mudan or White Peony ) is one of the most popular white teas in the world, originating from the Fujian province of China. It is made from a blend of young buds and the first two leaves of the Camellia sinensis plant , offering a fuller and more robust flavor than the more refined Silver Needle. 

Flavor Profile & Characteristics

Taste & Aroma: It is distinguished by its floral and fruity notes, with undertones reminiscent of honey, chestnut and fresh hay.

Appearance: Its leaves are irregularly shaped with a variety of colors from silver-white (in the buds) to deep green and brown.

Processing: It is one of the least processed teas, as the leaves only undergo natural withering in the sun and drying, preserving their natural antioxidants.

Brewing Instructions

To bring out the subtle aromas without making the tea bitter:

Water Temperature: 70°C – 80°C (avoid boiling water which burns the delicate leaves).

Extraction Time: 2 to 3 minutes (or up to 5 minutes for a more intense flavor).

Dosage: 1-2 teaspoons per cup (approximately 2-3g per 200ml).

Repeated Extractions: Quality Pai Mu Tan leaves can be extracted 2 to 3 times, releasing different layers of flavor in each cup.

Health Benefits

Due to its minimal processing, Pai Mu Tan is rich in polyphenols and catechins , which help boost the immune system and fight oxidative stress. It also has a lower caffeine content than black or green tea, making it suitable for consumption throughout the day.
