Pai Mu Tan (also known as Bai Mudan or White Peony ) is an exquisite variety of white tea from the Fujian province of China. Although often confused with green tea due to the color of its leaves, botanically it is a white tea , as it undergoes minimal processing (only natural withering and sun-drying).
Characteristics and Taste
Composition : It consists of a mixture of young buds and the first two leaves of the Camellia sinensis plant .
Aroma & Taste : It has a soft, floral aroma reminiscent of peonies and a fruity taste with notes of hazelnut and chestnut.
Low Caffeine : It is considered one of the teas with the lowest caffeine content, making it suitable for consumption throughout the day.
Preparation Instructions
To prevent the delicate leaves from "burning" and the taste from becoming bitter, follow the following:
Water Temperature : 70°C – 80°C (not boiling water).
Extraction Time : 1.5 to 3 minutes . Some experts recommend up to 5 minutes for a fuller flavor, as long as the temperature is low.
Dosage : 1-2 teaspoons per cup.
Multiple Extractions : The same leaves can be used 2 to 3 times , offering different flavor nuances in each cup.
