The whole seeds Mahleb ( Prunus mahaleb ) comes from the core of the wild cherry pit and is considered superior to the ready-made powder, as it retains its aroma for a much longer period of time. Its flavor is a complex blend of bitter almond, cherry and marzipan , with subtle notes of rose and vanilla.

Why choose whole grains?

Freshness: Grated mahlep oxidizes and loses its potency quickly. Whole kernels remain aromatic for months if stored properly.

Quality: They allow visual inspection of the spice (they must be light cream in color).

How to use: They must be ground shortly before use. Experts recommend using a mortar or coffee grinder . One secret is to add a pinch of sugar when grinding to prevent the seeds from sticking together.

Cooking Applications

Traditional Baked Goods: It forms the heart of the aroma in tsoureki , vasilopita and shortbread .

Dairy: Goes great with rice milk , vanilla creams, ice creams and cheese cakes .

Combinations: It shows excellent synergy with mastic , orange zest, cinnamon and honey.

Savory dishes: In small quantities it can be used in pumpkin or carrot soups, as well as in certain types of cheese.

Use in moderation (usually 1/2 to 1 teaspoon per 500g of flour), as too much can impart a bitter taste to the final result.
