The Long Pepper ( Piper longum ) , also known as Pippali , is a unique spice that is related to common black pepper, but offers a much more complex flavor experience. It has a shape reminiscent of a small pine cone or acorn and is distinguished by its sweet, earthy capsule with notes of cinnamon, cloves and cardamom.
Culinary Uses
Black pepper was particularly popular in ancient and medieval cuisine, while today it is a key ingredient in many Asian and African recipes:
Slow-Cooked Dishes: It is ideal for soups, broths and stews, as its flavor withstands long cooking times and gives depth.
Spice Blends: It is a central ingredient in traditional blends such as Indian Garam Masala , Moroccan Ras el Hanout and Ethiopian Berbere .
Meat & Seafood: Goes great with fatty meats (lamb, duck) and white fish. Can be used whole in the marinade or grated at the end.
Sweets & Fruits: Due to its sweet undertones, it pairs surprisingly well with dark chocolate, roasted pears or mango.
How to Use
Whole: Add 1-2 "cones" to broths or pickles and remove them before serving.
Ground: Because it is harder than regular pepper, it is best to crush it in a mortar or use a powerful spice grinder.
