Flavor Profile & Cooking

The flowers have a mild, slightly sweet and herbal flavor , but their main value in gastronomy is their coloring power:

Natural Colorant: Due to anthocyanins, the flowers impart a deep purple or red color to liquids (tea, syrups, cocktails).

Herbal Tea: Use 2-3 flowers per cup. The tea takes on a dark color that changes to a bright pink-red if you add a few drops of lemon (due to a change in pH).

Garnish: The whole dried flowers are used for decoration on cakes, salads and gourmet dishes.
